Believe me, when I left school I never imagined that I'd be in a kitchen making intricate desserts, or in front of a gas stove, cooking for large numbers of hungry diners all wanting their lunch in under 10 minutes. Back in 1991 I worked as a breakfast chef for Mr. Stakis, whilst at College. I'd cook the residents breakfast, do some prep for the other chefs then bolt across town to study graphics at College. The Head Chef offered me a full-time position as commis , which I grabbed.
